Spinach omelet and plantain Recipe

Start your morning with a good and healthy breakfast from Chef Sauny Joseph. Food to help you lose weight and start your morning full of energy. Inspired from the Caribbean cuisine, chef Sauny Joseph is giving you a step by step recipe for what he called ” Spinach omelet and plantain”

 

Ingredients

Green plantain 1 each
Parmesan cheese 1 cup
Spinach 1 cup
Egg 2 each
Tomato sauce 4 oz
White onion ¼ each
Red pepper 1
Green pepper 1
Haitian epis 2tsp
Salt to taste
Pepper to taste
2 oz of olive oil

Preparation

Cut a line along the edge of the plantain for an easier peel after being
broiled(optional cut along in half) then broil for about 15 minutes.
Crack eggs into a bowl and whisk and add 1 tsp of epis and mix.

Cook

Broil plantain for about 15 minutes, meanwhile at 1tsp of olive oil in an omelet pan, add 1 tsp of epis and cook for about 30 seconds, add pepper and onions and cook for about 3 minutes, add tomato paste (or tomato sauce), let simmer for 3 minutes then add 2 cup of water and let simmer for about 10 minutes.
In an omelet pan add the rest of the oil and then add spinach, cook for 1 minute then add egg, low heat, let egg cook in the pan, when fully cook to liking fold and add cheese.
